Zucchini like milk mushrooms is a really interesting recipe. Zucchini are sterilized in their own juice and, after standing for 2-3 months, begin to resemble pickled milk mushrooms.
It is necessary
- - 3 kg of zucchini,
- - 2 tbsp. tablespoons of salt
- - 6 tbsp. tablespoons of sugar
- - 150 ml of vegetable oil,
- - 200 ml of vinegar (9 percent),
- - 50 g dill or parsley,
- - 60 g of garlic,
- - 1 tbsp. a spoonful of ground black pepper.
Instructions
Step 1
Peel well-washed zucchini. You do not need to cut the peel from young zucchini. Remove the seeds from overripe zucchini. Cut the prepared squash pulp into small cubes.
Step 2
Wash and dry fresh herbs (dill or parsley), then chop finely. Finely chop the garlic cloves (about 10-12 cloves). Combine zucchini with dill, garlic, salt, sugar, black pepper, vegetable or sunflower oil and 200 ml of 9% table vinegar. Cover the container with zucchini with a towel and leave for 3-4 hours at room temperature. During this time, the zucchini will release juice, which will act as a marinade.
Step 3
After 3-4 hours, put the infused zucchini with herbs in jars (cover with sterile lids), which are placed in a container with water, sterilize for 10 minutes (time after the water boils). After boiling for 10 minutes, screw the jars with the same caps. Turn the jars over, cover with a blanket and leave to cool completely.
