Cod is a large sea fish with white meat, which is used to prepare dishes in many cuisines of the world. It is used as a filling for a variety of fish pies, boiled and fried. You can grill cod, make a salad or make cutlets, salt and smoke.
Delicious and fluffy cutlets are made from cod. To prepare them, take:
- 1 kg of cod fillet;
- ¼ liter of milk;
- 100 g of white bread;
- 2 tablespoons of butter:
- 2 medium sized onions:
- 3 eggs;
- greens of dill and parsley;
- olive oil.
Cut off all the crusts from white bread and soak it in milk. Cut the onion into small pieces and save in butter until transparent. Pass the cod fillet through a meat grinder, add bread soaked in milk and fried onions. Chop the herbs and add a couple tablespoons to the minced fish. Season the mass with pepper and salt and knead thoroughly. Make cutlets and sauté them in olive oil until golden brown.
Serve the cod cutlets with a savory sauce. Pass 8 cloves of garlic through a press, mix them with 4 yolks. Add a little vinegar, Dijon mustard, ketchup to the mass, salt and pepper the mass.
Another recipe for cod dishes is fried fish sticks. To prepare it, you will need 600 g of cod fillet, 1 cup of flour, 2 cups of bread crumbs, salt, black pepper and vegetable oil.
Cut the fillets into equal strips about 2.5 cm thick and 5-10 cm long. Pour breadcrumbs into one plate, flour into the second, and stir and whisk 3 eggs lightly in the third.
Place a sheet of foil on a baking sheet. Dip a piece of fish in flour, then in an egg, then in bread crumbs. Place all the fish prepared in this way on a baking sheet and cover it on top with a sheet of foil. Put the chopsticks in the refrigerator for half an hour. After that, remove and fry on all sides in heated vegetable oil until golden brown.
Place the sautéed cod on paper towels to remove excess oil.
Many consider cod to be a dry fish. In Soviet times, it was often fried in canteens, and the dishes really did not have excellent taste. But if you bake fish with mushrooms or vegetables in the oven, the cod will turn out to be very juicy and tender.
For 1 kg of cod fillet, take:
- 1 onion;
- 2-3 mushrooms;
- a bunch of parsley;
- 2 tablespoons of butter;
- salt;
- black pepper;
- thyme;
- 1 bay leaf;
- 0.5 liters of milk;
- 2 tablespoons of starch;
- 4 thin slices of bacon;
- 3 tablespoons of bread crumbs.
Preheat oven to 175 degrees. In the meantime, it heats up, cook the food. Peel and cut the onion into thin half rings, wipe the mushrooms with a clean towel and cut them into slices. Chop the herbs.
Melt the butter in a saucepan and save the onions in it until they are translucent. Add mushrooms and simmer all together for 5 minutes.
Place the mushrooms and onions in a baking dish. Place the cod fillet pieces on the mushroom pillow. Sprinkle fish with herbs, thyme and season with salt and pepper. Add bay leaves.
Bring the milk to a boil. Dissolve the starch in a little water and pour it into the boiling milk, stirring constantly. Cook over low heat, stirring continuously, until a thick mass forms. Pour the mixture over the prepared fish with mushrooms and bake in the oven for 10 minutes.
Cut the bacon into cubes and fry in a skillet until crispy cracklings are obtained. Remove the baking dish from the oven, sprinkle breadcrumbs on the surface of the casserole and add the bacon. Bake the fish in the oven for another 10 minutes.
