    • dry yeast - 2 teaspoons;

    • sugar - 4 tablespoons;
    • vanillin - to taste
    • for sweet dough.

Step 1

Heat the milk to a temperature not exceeding 40 degrees, check with your little finger - the milk should be slightly warm. Pour yeast into it, put a few tablespoons of sugar and add enough flour to make a batter. Place the resulting dough in a warm place for about an hour. When it rises and cracks appear on it, start kneading the dough.

Step 2

Sift flour into a bowl to oxygenate. Be sure to do this for a better dough rise. Mix flour and salt and add dough. Then add sugar and eggs at room temperature and start kneading the dough. For products with unsweetened filling, the amount of sugar can be reduced. Add vegetable oil at the end of kneading, knead the dough for a long time - at least 20 minutes. If you put vanillin, then also at the end of cooking. When the dough stops sticking to your hands, it’s ready.

Place the dough, sprinkled with flour and covered with a clean towel, in a warm place for 1, 5-2 hours, during which time it should double in volume. Checking the maximum rise of the dough can be very simple: try to touch it with your fingers - the finished one will sit down a little. Hump the dough and set it to come again. After the second rise, you can start cutting it into pies or pies.

After you mold the pies, let them lie on the table for a while - they will begin to come up again. When they increase slightly, start baking or frying. Before planting in the oven, baked pies and buns are greased on top with a beaten egg with water or with half a teaspoon of sugar and a teaspoon of vegetable oil. Do not open the oven while baking, as this may cause the food to settle. After 30-40 minutes, remove the baked goods from the oven and cover with a towel - the hard crust will soften on it.
