Easter cakes are traditionally consecrated in church on Holy Saturday and served on Easter Sunday. It is necessary

    • 1, 5 glasses of milk;
    • 6 eggs;
    • 300 g butter;
    • 2 cups sugar;
    • 50 g yeast4
    • 0.75 teaspoon salt;
    • 150 g raisins;
    • 1 kg of flour;
    • vanilla sugar;
    • 1 teaspoon water
    • 6 drops of alcoholic saffron tincture.

Instructions

Step 1

Make a dough. To do this, heat 1.5 cups of milk until warm.

Step 2

Dissolve 50 g of yeast in warm milk. Pour 500 g of flour into the dough, stir everything until the lumps disappear. Cover the dough with a clean cloth and place in a warm place.

Step 3

Mash 6 egg yolks with 2 cups granulated sugar and 300 g butter. Add some vanilla sugar to this mixture.

Step 4

After doubling the volume of the dough, add 0.75 teaspoon of salt and a mixture of yolks, sugar and butter to it. Mix everything well.

Step 5

Dissolve 6 drops of saffron alcohol in 1 teaspoon of warm water. Add this solution to the dough for a golden yellow color.

Whisk 6 egg whites until firm.

Step 7

Add beaten egg whites and 500 g flour to the dough. Knead the dough so that it comes off the sides of the pan, but is not too thick.

Cover the dough with a cloth and leave in a warm place to double the volume.

Step 9

Rinse 150 g raisins, pat dry and roll in flour.

Step 10

Add the prepared raisins to the matched dough and knead well.

Grease baking dishes well with butter and fill them with dough one third full. Leave the dough in the molds in a warm place until it has risen three-quarters of the height of the molds.

Place the tins with the matched dough in the oven, preheated to 160-170 degrees. Do not shake the molds or slam the oven door, otherwise the dough will settle.

Step 13

Bake the cakes until tender. Check readiness with a wooden splinter.

Step 14
