Instructions
Step 1
To make Easter cake with raisins in a slow cooker, the first thing to do is to make a dough. Heat the milk in a ladle on the stove or in a microwave oven until warm (36-38 degrees). Then pour it into a cup (you can take a glass or plastic one), add yeast to it and stir thoroughly. Then add 1 tablespoon of sugar and 3 level tablespoons of flour. Stir, cover and put in a warm place for 15-20 minutes.
Step 2
Meanwhile, pour the rest of the sugar into a large, deep bowl, add the eggs and whisk until the sugar is completely dissolved. You can also use the mixer at low speed.
Step 3
When the dough is covered with a frothy head, pour it into a bowl with beaten eggs and sugar, add salt, vanillin and flour. The latter is best added in parts, so that it is more convenient to control its quantity. The dough should be soft. After that, transfer it from the bowl to the table.
Step 4
Stir in the soft butter in chunks to distribute as evenly as possible. Now you will need to add sunflower oil to the dough. For convenience, pour it into a wide bowl and, scooping it up a little by hand, add to the dough and stir well.
Step 5
Pastry dough differs from ordinary yeast dough in that it must be kneaded for as long as possible. Therefore, be prepared for the fact that it should take you at least half an hour to knead for the best result.
Step 6
When the dough is ready, give it a rounded shape, place in a deep bowl, cover with cling film and remove to a warm place. If it is cool in your house, then you can proceed as follows: fill a large bucket with warm enough water, almost hot, place a bowl of dough on top of it and cover the resulting structure with a blanket or several towels. Then leave the dough to rise. As a rule, it will take him about 4 hours on average.
Step 7
While the dough is coming up, prepare the raisins. To do this, transfer it to a bowl, fill it with hot water and leave to soften a little for a few minutes. After that, it should be thoroughly dried. Absolutely dry raisins can be rolled in flour for more even distribution in the dough.
Step 8
When the dough has grown significantly in size, transfer it to the table and stir in the prepared dry raisins. This should be done with smooth movements of the hand so that the dough remains airy. Then round it again and return it to the bowl. Let it stay warm for a while, until it becomes 2 or 3 times larger.
Step 9
As soon as all the work on preparing the dough is completed, grease the multicooker bowl with butter and transfer the dough that has come up into it. Close the lid, set the Bake mode and set the time to 1 hour and 20 minutes.
Step 10
When the time is up, let's prepare the icing for the cake. To do this, take an egg and carefully separate the white from the yolk. Put the yolk in the refrigerator - it can then be useful for other dishes, and add powdered sugar, lemon juice to the protein and beat with a mixer at maximum speed for 7-8 minutes until stable peaks form.
Step 11
When the multicooker signals the end of the program, open the lid and remove the finished cake from the bowl. To make this easier, use a steamer basket, or wrap a towel over the bowl and turn the bowl over.
Step 12
While the cake is still warm, cover the top with the finished protein icing and garnish with pastry sprinkles.
