On the eve of Bright Easter, the hostesses stock up on new recipes for fragrant delicious cakes. After all, Easter cake is an obligatory attribute, a symbol of the great holiday that Orthodox Christians have been waiting for throughout the whole year.

Step 1
Start by making a dough. To do this, heat the milk in a saucepan to 40 degrees. Gently add yeast and 1 tbsp. Sahara. Dissolve. Sift 1 cup flour and gradually add to the pan with milk. Mix everything thoroughly, cover and place in a warm place to double the amount of dough.
Step 2
Separate the whites from the yolks. Mash the yolks thoroughly with sugar. Melt and cool the butter. Add yolks with sugar, butter, a little salt and vanillin to the dish with the dough. Stir. Whisk the whites into a dense foam and add to the dough. Sift the flour and carefully add to the dish with the dough, stirring continuously, so that no lumps form. In order to thoroughly knead the dough, use a mixer. Cover the finished dough with a lid or napkin and leave warm. It should rise, increasing in volume several times.
Step 3
Rinse raisins, dried apricots, prunes and pat dry with a towel. Cut candied fruits into small pieces. Nuts: finely chop almonds, walnuts or hazelnuts with a knife. The choice of cake filling depends on the personal preferences of the cook. Add the prepared filling to the dough and knead it thoroughly for 5-7 minutes.
Step 4
Grease baking dishes with a small dish, cover with parchment paper and sprinkle with flour or breadcrumbs. Pour the dough into prepared tins and leave in a warm place for a few more minutes. During this time, beat 1 yolk and spread on the top of the cakes.
Step 5
Bake the cakes in an oven preheated to 180 degrees for 40-60 minutes. When the top of the pastry is browned, cover it with a piece of foil or paper to prevent it from burning.
Step 6
Gently lay out the finished cakes from the mold and leave on a towel. Cover with another towel on top and wait until it cools completely.
Step 7
Cover the top of the finished baked goods with glaze. To prepare it, beat the white of 1 egg with powdered sugar and lemon juice. Decorate the icing with colored sugar sprinkles.
