Refining is a complex process that involves cleaning the oil from those fats that give it an unpleasant odor, a certain taste and reduce its shelf life. These fats are called "crude oils" and are the unprocessed fats from fruits used to make edible oils. There are 4 main stages (in addition to the mandatory stage for all commercial products - getting rid of mechanical impurities) of refining.

Step 1
The so-called "hydration", which makes the oil more transparent and gets rid of phosphatides (promote the correct metabolism of fats).
Step 2
Neutralization or removal of fatty acids (if they are in excess, the oil tastes bad). After this stage, the oil is called "refined non-deodorized".
Step 3
Whitening removes residues of phosphatides and pigments, the oil becomes light in color.
Step 4
Freezing (for sunflower and corn oils), removal of wax-like substances.
