"Hedgehogs" are minced meat cutlets with rice. Most often they are made in a round shape. The appearance of the finished product, with sticking out rice needles, resembles a hedgehog. "Hedgehogs" can be baked in the oven or stewed in sauce.

Instructions
Step 1
"Hedgehogs" with boiled rice
Make minced beef and pork. Peel the meat from films and tendons and pass through a meat grinder.
Peel the head of the onion. Cut into pieces and mince with minced meat. It will add juiciness to the meat.
Step 2
Grate the carrots on a coarse grater. Finely chop the second onion. Fry the carrots and onions in vegetable oil. Put a glass of rice in a sieve and rinse under running water until the flowing water becomes clear. Pour boiling water over the rice and boil until half cooked.
Step 3
In a deep bowl, combine the minced meat, sauteed onions and carrots, and boiled rice.
Season with salt and pepper to taste. Mix everything well. Take pieces of minced meat with wet hands and form balls of 20 - 30 g each. Place the balls in a deep saucepan so that they do not touch each other.
Step 4
Mix mayonnaise with ketchup in a bowl, add a little water. Pour the prepared "hedgehogs" in a saucepan with the mixture so that the liquid hides them by half. Cover the saucepan or cover with foil and place in the oven. 10 minutes before cooking, remove the lid to brown the patties.
Step 5
"Hedgehogs" with raw rice.
Add a glass of dry rice to minced meat with onions. Mix the mixture with the fried onions and carrots. Season with salt and pepper to taste. Form into round patties. Fry them quickly in a hot skillet until crisp. Place in a deep saucepan.
Step 6
Pour two glasses of meat broth over the hedgehogs. Add 2 tablespoons tomato paste, 3 bay leaves, 5 black peppercorns, two garlic cloves, crushed with salt. Add water if necessary. The sauce should completely cover the hedgehogs. Put on low heat. Simmer covered for 30 minutes.
