Such a delicacy turns out to be not only incredibly tasty, but in addition to everything, it does not have harmful chemical additives and preservatives.

Ingredients:

  • 550 g granulated sugar;
  • 8 g agar agar;
  • 250 g cherries (pitted);
  • 1 egg white;
  • 160 g of drinking water.

Preparation:

  1. Ripe cherries need to be sorted out, rinsed thoroughly and allowed to drain off the water. Then the berry is placed in a small plastic bag and put into the freezer.
  2. After the cherry berries are frozen, they are laid out in a colander. During thawing, most of the juice should flow out of it.
  3. When the juice drains, use a blender to prepare cherry puree, chopping the berries. Then you need to measure exactly 250 g of the resulting puree. Set it aside in a separate metal dish and heat it up quite a bit. After that, pour 200 g of granulated sugar into this puree.
  4. Next, you need a mixer. They need to thoroughly beat the resulting cherry mass. Then egg white is poured into it and the mass is whipped again. This is done until the contents of the container increase 3 or 4 times.
  5. Dissolve agar agar in water. After that, the container with it is put on fire and wait until it boils. Next, the remaining granulated sugar is poured into the container. With constant stirring, the resulting syrup must be boiled until its temperature rises to 110 degrees.
  6. Then, without stopping, whipping the puree, you need to gradually introduce the syrup into it. To do this, agar-agar mixed with sugar and water is poured in a thin stream into whipped cherry puree. Then the resulting mass is whipped for another 5 minutes. As a result, the whipped mass should lighten a little, and its consistency will become denser. It will also increase significantly in volume.
  7. To check the readiness of the resulting mass, you need to raise the whisk. The marshmallow mixture on it should not lose its shape and fall from it.
  8. Then, using a pastry bag and a large sprocket nozzle, you need to shape the marshmallows as quickly as possible. They should be laid out on the rug.
  9. After this, the finished delicacy must be allowed to dry out a little. To do this, leave it uncovered for 10-12 hours, and then sprinkle it with powdered sugar. Marshmallows are stored in the refrigerator in a closed container for no more than a week.
