Marshmallow is a French dessert that means "light breeze". Such a delicacy can be easily prepared at home, it will come out no worse than a store one. The only inconvenience - you need to wait a day until it hardens.
Ingredients:
- 5 g powdered agar-agar;
- 1 egg white;
- 250 g pitted cherries;
- 400 g sugar;
- 75 ml of water;
- Powdered sugar for dusting.
Preparation:
- If you use fresh frozen cherries, then you need to take more - 300 grams, since after defrosting the weight will decrease. If fresh, then first you need to sort them out, wash and remove the bones.
- Then place in a refractory container and cover with a spoonful of sugar. Put on fire. If you have fresh cherries, pour some water on the bottom of the container so that they do not burn. Boil and boil for 5 minutes.
- After that, remove the cherries from the heat, cool slightly and interrupt with an immersion blender until puree.
- Take 125 ml of the resulting smoothie and mix with 125 grams of sugar. Boil for two minutes and cool.
- Pour agar-agar with water and leave for 15 minutes, then put it on fire, boil and pour 240 grams of sugar into it. Bring to a boil again, cook for 5 minutes, stirring the syrup all the time.
- When the cherry smoothie has cooled, add half of the protein and beat with a mixer for 2 minutes. The mass will brighten and increase in volume. Continue whisking adding the other half of the protein. The mixture will fade even more and gain volume. Continue whisking further and slowly pour in hot agar-agar.
- Plant our marshmallows on parchment paper. To do this, use a pastry bag or syringe. And leave to freeze for one day. After a day, sprinkle the marshmallows with powdered sugar. If desired, connect them in pairs.
