Marshmallows are sweets like soufflé or marshmallows. It is considered one of the favorite delicacies of Americans, but it is becoming more and more popular in Russia. Marshmallows, if desired, are easy to cook at home - it turns out to be even tastier and more tender than brought from the store.

Prepare 400 grams of sugar, a glass of water, 25 g of gelatin, a little salt, 0.5 cups of starch, the same amount of powdered sugar, vegetable oil - choose odorless. For flavor, you can use vanilla sugar - 10 g. You will also need invert or corn syrup - you can buy it in the store or make it yourself.

If you are going to prepare the syrup yourself, start with it. In a saucepan with a thick bottom, mix 50 ml of water, 120 g of sugar, a tablespoon of lemon juice. Put the mixture on fire and bring to a boil with constant stirring. Reduce the fire, boil the syrup to the state of liquid honey, then cool.

Mix 100 ml of cold water with gelatin, set aside - let it swell. After half an hour, heat up so that the gelatin can completely dissolve.

Now combine the sugar, syrup, salt and the rest of the water in one saucepan. Put on fire and boil, stirring constantly. Then simmer the syrup for 8-10 minutes. Pour the loose gelatin into a deep bowl and pour in the hot syrup. Beat the mixture with a mixer on low speed. The mixture should expand in volume and become fluffy, stringy, and white. Add vanilla essence there, stir again and cool everything.

Cover the baking dish with baking paper, brush with butter. Put the resulting mass in a mold and smooth with a spatula. Cover with cling film or cling foil and refrigerate for at least 6 hours. Can be left at room temperature.

Make a mixture for boning the resulting sweets - for this, mix the icing sugar with starch and sift through a sieve. Marshmallows can be cut into pieces of any kind or use ready-made forms for sweets or cookies, and then roll them in powder.

When cooking, you can add food colors, cocoa, chocolate, flavors or syrups with different flavors to the marshmallow mix.
