Marshmallow has a lot of fans. But not everyone knows about the possibility of making this dessert at home. It requires simple ingredients and the cooking process itself is also not complicated. The homemade delicacy prepared with a soul will be to everyone's taste!
The Institute of Nutrition of the Russian Academy of Medical Sciences recommends marshmallows for use in schools and kindergartens. Not every confection is so honored. Marshmallow is a tasty and healthy delicacy. The carbohydrates contained in it increase mental activity, dietary fiber improves digestion.
To prepare pineapple marshmallows you will need:
- canned pineapples - 1 can;
- sugar - 300 g;
- cream with a fat content of 25% - 1 liter;
- gelatin - 40 g;
- water - 400 ml.
The word "marshmallow" in translation from ancient Greek means "light breeze".
Pour gelatin with water. Cut pineapples into very small pieces or grind using a sieve or colander. You must first drain the syrup. Beat the cream with sugar using a mixer. Melt the gelatin over medium heat, not boiling. Mix the slightly cooled mass with chopped pineapples. To stir thoroughly.
Combine the resulting puree with whipped cream. Place the marshmallows on a prepared dish with parchment paper or cupcake tins. Refrigerate for 4 hours. In order for the marshmallows to be easily removed from the molds, they can be dipped in boiling water for a few seconds. You can also use peaches or other canned fruits for fruity marshmallows.
To prepare a classic vanilla marshmallow you will need:
- water - 300 ml;
- sugar - 1 kg;
- gelatin - 25 g;
- citric acid - 10 g;
- vanilla sugar - 10 g;
- soda - 10 g.
If you replace regular sugar with cane sugar, then the marshmallow will turn out to be beige and will have a caramel taste.
Soak gelatin in half a glass of cool water. To prepare the syrup, pour the sugar into a saucepan and add the rest of the water. Stir, wait until the sugar is soaked in water, bring to a boil over low heat. Cook, stirring occasionally, for 10 minutes.
Add gelatin to the resulting syrup, mix. Beat with the mixer turned on at the minimum speed for 10 minutes. Add citric acid to the mixture and continue to beat for about 5 minutes. You can use a whisk, in which case the whipping time will increase slightly. Add baking soda and vanilla sugar. Whisk until mixing for another 2 minutes. Let the resulting mass brew for 10 minutes.
Place parchment paper on a cutting board, baking sheet, or large dish. If such paper is not available, you can moisten the dish or baking sheet used with water. Form marshmallow halves using a cooking syringe or spoon. Put the dish in the refrigerator for 4 hours. Do not use the freezer to speed up the process! To add spice to the finished marshmallow, you can decorate it with chocolate icing, berry or fruit topping.
To prepare the glaze, add 2 parts sugar and 1 part cocoa to 4 parts milk. Bring to a boil, cool, add a little butter. You can replace this glaze with a chocolate bar previously melted in a water bath.
Marshmallow can be used not only as an independent dessert, but also to decorate cakes with it. If you cut the marshmallows into pieces and mix with ice cream, fresh fruits or berries, you get a very tasty and original delicacy.
