Before choosing a marinade, you should learn a few simple rules for cooking barbecue:

1. When marinating meat, it is better not to salt it, as then it will turn out to be dry.

2. Salting meat for kebabs is best before stringing on skewers or during cooking over the fire.

3. It is better to cut meat for barbecue in small pieces - such that they fit in the mouth, since too large pieces are not always well fried, and it is inconvenient to eat.

Step 2

Onion marinade

Peel 700-800 g of onions, grate (mince or grind in a blender) Put the liquid onion gruel in a large bowl. Chop the meat, mix with the onion mass, pepper (2-3 tablespoons of ground black pepper).

Cover the bowl with a napkin, gauze or towel. Leave in the marinade for 3-4 hours. Before stringing on skewers, it is better to clean the pieces of meat from the onion gruel. This can be done very simply - by hand, while stringing on skewers.

Step 3

Wine marinade

For cooking, you will need 2-3 glasses of dry wine (preferably red), 3 onions, 2 tbsp. tablespoons of ground black pepper, 1 tbsp. a spoonful of granulated sugar, 2 tbsp. tablespoons of lemon juice. Onions must be cut into thin rings or half rings, mixed with pieces of meat, lemon juice, pepper and sugar. After that, pour in wine and marinate in a cool place for at least 8-10 hours. It is better to start this type of pickling in the evening, so that in the morning the meat for the kebab is ready for frying.

Step 4

Kefir marinade

For kefir marinade, you will need 1 liter of non-fatty kefir (no more than 2.5% fat), 1 kg of onions, 1 tbsp. a spoonful of dry herb hops-suneli, black pepper - 2-3 teaspoons without top.

Dice the onion, pepper, add the suneli hops. The mixture must be mixed well, squeezed with your hands so that the onion lets out the juice. Mix pieces of meat with this mixture, rub well into the meat. After that, add kefir, mix, shake, cover with a napkin or towel and put in a cool place for 2-3 hours.

Step 5

Mustard honey marinade

To prepare this spicy marinade, you will need 1 tbsp. a spoonful of hot mustard, 1 tbsp. a spoonful of honey, 1, 5 teaspoons of ground black pepper, 1 teaspoon of caraway seeds, lemon or orange peel - to taste.

All this must be laid out and poured into a convenient container with a lid, mix thoroughly and put in a cool place for 1 hour. There is no need to marinate the meat in this mixture, it is mixed with pieces of chopped meat just before stringing on skewers. It is better to beat off the meat for barbecue with this marinade or leave it in the refrigerator overnight, pouring it with sparkling mineral water - it will become softer.

Step 6

Tomato marinade

You will need 0.5 kg of onions, 1 kg of tomatoes, 1.5 teaspoons of black pepper. Cut the tomatoes into large pieces (halves or quarters), cut the onion into half rings and mix with the pepper. Combine all this in a spacious bowl, mix with pieces of meat and marinate for 4 hours. Some lovers of fatty sauces add a few tablespoons of mayonnaise to this marinade. Harmful, but tasty. And if you consider that barbecue is not a frequent pleasure, then you can afford it without fear of harming your health.
