Step 1

Pour gelatin with water (0.5 cups), leave for 30-40 minutes to swell.

Make invert syrup, a molasses substitute that prevents sweet foods from crystallizing. In a saucepan, heat the liquid and dilute the sugar in it. When it boils, add citric acid.

Cook over low heat for 45 minutes, covering the container with a lid. The finished syrup will turn golden brown, identical to fresh honey, but not viscous.

Dilute the baking soda diluted with water (1 dessert spoon) and carefully add to the slightly cooled sugar syrup. When the foam falls off, boil the syrup for about 10-15 minutes.

Heat the swollen gelatin in a water bath until it is completely dissolved, but do not let it boil. Start making marshmallows. Pour a glass of water into a saucepan, add sugar, salt and 150 g of invert syrup. Use the remaining half as you see fit.

Step 6

Stirring regularly, bring the mixture to a boil, then reduce the flame and continue to cook for 8-10 minutes. Beat the gelatin with a mixer, then whisk in portions of the hot syrup. Whisk for about 10-15 minutes.

Step 7

When the mixture is thick and fluffy, add any color or flavor you like. Cover the form with foil (foil), spread the sweet mass evenly, cover it with the same foil (foil) and leave for 6 hours.

Step 8
