If you have a compote at home, and you do not know what to do with it, you can make a very tasty, aromatic homemade wine from it. The process of its preparation is quite simple, you only need a little sourdough and sugar. The main thing to remember is that the utensils for making wine should be glass or wooden, in no case metal. And you can treat guests and loved ones with cooked wine with your own hands at a round festive table.

It is necessary

  • - glassware,
  • - plasticine or paraffin.

Instructions

Step 1

The first step is to prepare the sourdough separately. To do this, you need 200 g of raspberries (no need to wash), which you need to grind with 100 g of granulated sugar. Add a little water and leave to ferment in a cool place for 3-4 days. The berries do not need to be washed because natural yeast is present on the surface of the berries.

Step 2

Add more granulated sugar to the compote and pour into previously washed and scalded glass bottles or jars. Pour the compote not to the top, leave room for sourdough and fermentation.

Step 3

For every 3 liters of compote with a lot of sugar, add 2 tbsp. l. sourdough in the form of grated raspberries with sugar. Raspberries can be replaced with raisins, in which case 120 g of unwashed raisins must be added to a three-liter jar.

Step 4

You can add a little honey to each bottle, it will significantly improve the taste and aroma of the wine.

Step 5

Now you need to prepare the bottle caps of the appropriate size. Roll a ball of cotton wool that is suitable in size and wrap it with gauze. Plug the neck of the bottle with this cork and remove the container in a dark place.

Step 6

After 7-10 days, the berries will rise to the surface, they must be carefully removed. Strain the remaining liquid and pour into clean bottles or jars.

Step 7

Prepare a water seal. To do this, you need to make a small hole in the plastic cover and insert a rubber tube. Cover the junction with plasticine or paraffin, lower the other end of the tube into a container of water.

Step 8

Banks with a water seal should be removed for 1, 5-2 months in a warm place until fermentation stops. This can be seen by the cessation of the release of bubbles into a container with water. By that time, the wine should be clear and a sediment has formed.

Step 9

The prepared wine must be carefully drained from the sediment using a flexible hose. Pour into clean bottles, close with corks and keep in a cool place for 1-2 months.
