Many people mistakenly call Easter cakes Easter. Meanwhile, these are different dishes. Easter is made from cottage cheese, cream or sour cream with eggs and sugar; Easter cake - made from yeast dough.
Easter raw
Traditionally, cottage cheese for Easter had to be wiped through a sieve, but it is more convenient and faster to pass it through a meat grinder or beat with a blender. So, beat the cottage cheese, add softened, but not melted, butter, sour cream, sugar, eggs, salt to it, stir everything well and beat again with a blender (or rub through a sieve if you prefer tradition). Add raisins, cinnamon and vanillin to the resulting mass and stir again. Put a wet napkin made of natural fabric into the Easter dish, covering the edges, and transfer the curd mass there. Cover the top with the edges of the napkin, put the load and refrigerate (not in the freezer) for 12 hours. Gently transfer the finished Easter to a dish and decorate with candied fruits or berries from jam.

- sugar - 0.25 kg;
- oil - 0.2 kg;
- sour cream - 0.25 kg;

Boiled easter
Beat the cottage cheese with a blender, add softened butter, sour cream or heavy cream, egg, sugar, salt and vanillin. Beat the mixture again, transfer to a saucepan and start heating over low heat, stirring all the time, until it begins to thicken. Cool the curd mixture, add the raisins, washed and steamed in boiling water, ground nuts and mix everything well. Transfer to an Easter pan and chill as described above.

Easter with jam
Strain the glass of pitted jam (strawberry, raspberry, or currant) from excess syrup. Beat the cottage cheese with a blender, add thick jam, butter, sour cream, egg and sugar to taste. Whisk the mixture with a blender and shape the Easter as in the previous recipes.
