Royal Easter

Beat fresh fat cottage cheese with a blender or pass through a meat grinder, add eggs, sour cream or heavy cream, butter and beat again. Heat the curd mass over low heat, stirring all the time with a wooden spoon or jar. As soon as at least one bubble appears, indicating a boil, remove the pan from the heat, put it in the cold and stir until the mixture cools down. Add raisins, washed and steamed in boiling water, chopped almonds or other nuts, vanillin and sugar.

Cover the Easter baking dish with a damp cloth covering the edges and transfer the curd mass to it. Fold the edges of the fabric over the curd and place the weight. Place the mold in the refrigerator for 10-12 hours.

Products:

- cottage cheese -0.5 kg;

- egg - 2-3 pcs.;

- butter - 0.1 kg;

- sour cream - 0.2 kg;

- sugar - 0.15 kg;

- raisins - 1 glass;

- nuts - 0.5 cups;

- vanilla to taste

Red easter

Pour the milk into a deep saucepan and simmer in the oven over the lowest heat until it turns brown. Chill the milk to 35-36 degrees, add sour cream and leave in a warm place for fermentation.

When the milk is fermented and the whey has separated, place the saucepan on very low heat and heat, stirring constantly with a wooden spoon to separate the curd. When the curd has collected in a lump, fold the contents of the pan into a tight linen bag. Hang the bag to glass the serum.

Beat the cottage cheese or rub through a sieve, add raw eggs, sugar and salt to taste. Whisk the mixture again and shape into Easter.

Easter with whipped cream

Place the oil in a warm place to soften. Whip cream or sour cream with sugar. Mix the grated cottage cheese with butter, whipped cream, boiled and grated yolks, chopped candied fruits. Mix everything well and beat the curd mass with a blender, then form Easter, as described in the 1st recipe.
