Reconstituted juice is produced on an industrial scale from natural juice concentrate. Juice concentrate is obtained by the method of water evaporation from natural juice for the purpose of convenient storage and transportation to the enterprises producing reconstituted juices. With full adherence to the technological process, the whole complex of nutrients is preserved in the concentrate and reconstituted juice, as in freshly squeezed juice.

Juice concentrate production technology

Thanks to modern technologies for processing fruits and berries, up to 80% of the vitamins and microelements that were originally contained in the raw materials are preserved in the concentrated juice. Complete sterility at all stages of production, aseptic container allows you to store the juice concentrate for a long time without losing its original properties and qualities.

Juice recovery technology

The quality of juice directly depends on the raw material, therefore it is important to choose environmentally friendly raw materials for juice production. Another requirement for raw materials is hardness and density, therefore, special varieties of berries and fruits with increased juiciness are chosen. And, of course, the quality of raw materials is monitored, rotten and damaged fruits are discarded.

Concentrated juice recovery technology is carried out in several stages. The concentrate is very quickly, in 30-40 seconds, heated to 110 ° C and the achieved temperature is maintained for several seconds. This is followed by rapid cooling to a temperature of 20-22 ° C. Pure high-quality water is added to the juice concentrate heated in this way. The amount of added water is equal to the amount of water evaporated at the stage of obtaining the concentrate.

The resulting juice is reconstituted. To return the juice to its previous aroma, often added "return aroma", separated earlier in the concentration process, or aromas obtained by other technologies. Natural flavors are obtained from the peel of the fruit during processing. When juice is reconstituted, ascorbic acid may be added to replenish some of the vitamin C lost during processing. Vitamins A and PP are added.

At the next stage, the reconstituted juice is pasteurized and poured into aseptic packaging for subsequent storage and retail sale. The most popular packaging for reconstituted juices is the composite polymer materials used by Tetra-Pak. In such packaging, juices are protected from direct exposure to oxygen and sunlight, which helps to maintain the quality of the juice. Thanks to the gentle heat treatment and high-quality packaging, no preservatives are added to the juices. The packaging must indicate that the juice has been recovered from a concentrate and with the addition of vitamins.

You need to choose juice by date of manufacture and expiration date. Be sure to check the integrity of the packaging. It is also important who produced the juice. It is better to take the product of well-known companies. It is useful to pay attention to the composition of juices and nutritional value, to make sure that there are no additives.
