Instructions
Step 1
The first step for the potato and onion quiche is to prepare the dough. Combine flour, butter, baking powder, water, and a pinch of salt. Knead these products into a smooth, elastic dough. It is best to do this with your hands, without the help of kitchen units. Place the resulting dough in a bag, leave to rest for 20-30 minutes.
Step 2
Grease a baking dish with butter.
Step 3
Peel the potatoes, cut them into slices 5-10 millimeters thick, cover with boiling water and put on fire for 5 minutes. During this time, the product should reach half-readiness, after which you will only have to drain the water and set the pan with the lid removed to the side, let it cool down.
Step 4
Preheat oven to 180C. Remove the dough from the bag, distribute it with your fingers along the bottom of the mold, grabbing a couple of centimeters and its sides. Prick the resulting crust in several places with a fork. Place the dish in the heated oven for 10 minutes.
Step 5
Chop the onion into small cubes, heat the vegetable oil in a pan, fry the onion until golden brown, then add the ham or bacon cubes to it, continue to fry everything together for another 3-4 minutes. Refrigerate slightly. Pour in the cream, beat in the eggs, mix well. If necessary, you can add a little salt to the filling. But be careful, the ham itself is usually quite salty and you run the risk of oversalting the dish.
Step 6
Take the cake out of the oven, put the potatoes on it in an even layer, cover with the egg-onion mixture. Grate the cheese, sprinkle it on the surface of the pie.
Step 7
Bake the onion quiche in the oven at 180 ° C for the next 25-30 minutes. The cake is ready if a beautiful ruddy crust has formed on its surface.
Step 8
Cut the finished quiche in portions and serve. Depending on the size of the portions, it should be enough for 4-6 people.
