Pie with cheese and herbs is a popular dish of Ossetian cuisine. However, such pies are eaten with pleasure by those who have never been to the North Caucasus. In different villages, this dish is prepared in different ways, but two components are required: soft cheese and herbs.

Instructions
Step 1
Only premium wheat flour is suitable for the cheese and onion pie. Sift it well and pour it on the table with a slide. Make a hole in the center. Gradually pour kefir into the well. Soften the margarine (you can just keep it outside the refrigerator for a while) and add to the future dough. Mix the ingredients thoroughly, add yeast and a pinch of salt.
Step 2
Knead the dough well so that it is a homogeneous elastic mass. Place it in a tall saucepan, cover and place in a warm place for a couple of hours. Wait for the dough to come up.
Step 3
For such a cake, it is best to use very fresh cheese, one day aging. Remove the remaining liquid from it (you can just squeeze it out). Grind the mass well so that it becomes greasy and homogeneous. Season to taste.
Step 4
Wash the onion, remove dry feathers and chop finely. Combine it with the cheese and stir the filling well to distribute the onion evenly.
Step 5
Divide the dough into 4-5 roughly equal pieces. Roll out a flat cake about 0.5cm thick from each piece. Try to make the plates more or less even.
Step 6
Spread the filling in an even layer, leaving strips about 4cm wide along the edges of the cake. Flatten the cheese layer. Fold the edges of the flatbread towards the middle, carefully pull them together and blind them together. Line up the cake. Flip it over and align again. Repeat this operation several times, trying to give your creation a rounded shape.
Step 7
Place the pie in a skillet, preferably a cast iron skillet. Pre-grease the form with fat. Make a few small holes on the top surface so that the cake does not burst when baking.
Step 8
Preheat oven to 250 ° C. Place a frying pan in it. Bake the cake for about a quarter of an hour, until golden brown. Brush the top surface with butter before serving. This dish is eaten hot.
