Unusual appetizer salad, which can be served on a holiday "with vodka" or prepared when you need to surprise guests with an unusual but tasty appetizer.
Ingredients (for 4 servings):
- Chicken egg - 8 pcs;
- Young green onions, with a head - 120 g;
- Goose fat (chicken) - 80 g;
- Pickled cucumbers - 50 g;
- Fine salt, ground black pepper - to taste;
- Chopped fresh herbs.
Preparation:
- Peel the onion from the top husk and dirt. Finely chop the young onion head and cut its green feathers into small pieces. Transfer to a salad bowl and add salt. Leave on for 35 minutes.
- Coarsely chop the hard-boiled eggs cooked in advance and add to the bowl to the onion. Mix.
- Season the onions and eggs with goose (chicken) fat, pepper and salt. Leave on for 20 minutes.
- Cut the cucumbers into halves and cut into half rings, after cutting off the tips from them. Add to the salad bowl. Stir in salad.
- Before serving, the salad should be transferred to a beautiful salad bowl and sprinkled with chopped fresh herbs on top. Pickled cucumbers can be replaced with fresh ones. In this case, they must be peeled and only then cut.
The salad can be prepared in one more way:
- Grind hard-boiled eggs.
- Peel the onion from the top husk, finely chop and sauté in sweet butter (40 g). You can use olive oil instead of sweet butter.
- Stir eggs and onion.
- Add salt and chopped herbs to the salad. You can take any greens. Chopped salad mix is perfect.
- Melt goose or chicken fat in a skillet.
- Pour some cooled fat over the salad and stir.
