Here is a recipe for making Bundt Muffin with a protein cream that melts in your mouth.

- For the cupcake:
- - 200 g unsalted butter at room temperature
- - 350 g sugar
- - 2 large eggs
- - 2 yolks
- - 1 teaspoon vanilla extract
- - 2 teaspoons baking powder
- - 1 teaspoon of salt
- - 2 1/2 cups flour
- - 1 cup buttermilk
- For the cream:
- - 2 egg whites
- - 2/3 cup sugar
- - 1-2 drops of lemon juice
- - 1 teaspoon vanilla extract

Step 1
Preheat the oven to 170 C. To make this cake, you will need a round ribbed baking dish with a hole. Lubricate it liberally with oil.

In a large bowl, beat the butter and sugar until light and fluffy. Add eggs gradually and then yolks. Add vanilla extract. Then - salt, baking powder and stir quickly. Then add about 1/3 of the flour and half of the buttermilk and stir again. Add 1/3 more flour, leftover buttermilk, and then leftover flour.

Place the dough in the prepared pan, making sure to crush it so that the top is smooth.

Bake in oven for 40-45 minutes, or until a toothpick inserted into the center of the cake is dry. Then let cool.

When the cake is completely cool, turn it over. Lightly level the surface with a serrated knife. Then, using a small round spoon, cut out small round holes, being careful not to touch the top and sides of the cupcake.

Prepare the protein cream in a water bath in a bowl by mixing egg whites, sugar, and lemon juice. Cook for about 3 minutes, until sugar dissolves.
