Focaccia is a national Italian flatbread made from wheat flour. Literally translated, focaccia is bread baked in the hearth. The traditional focaccia recipe contains only 3 ingredients - water, olive oil and wheat flour.

- - 350 g wheat flour
- - 250 ml of water
- - 160 g grated Parmesan
- - 5 g yeast
- - olive oil
- - coarse sea salt
- - 2 young onions with herbs
- - a few sprigs of cilantro and mint
- - a clove of garlic
- - salt and pepper
Instructions
Step 1
Sift flour into a deep bowl, add salt, grated Parmesan cheese and yeast. Boil water and pour in a thin stream into a bowl containing flour, cheese and yeast. Pour in some olive oil and knead into a smooth elastic dough.
Step 2
Shape the dough into a ball shape. Cover it with a linen napkin and set it aside in a warm, draft-free place for an hour. Divide the dough into 2 equal parts, and on the floured work surface, roll out two rectangles.
Step 3
Spread the rolled out layers of dough on a baking sheet, grease each layer with oil and cover with a rag napkin for 20 minutes, so that the dough rises slightly. Heat the oven to 210 degrees and bake the focaccia base for 10-15 minutes.
Step 4
For the pesto sauce, peel and finely chop the garlic, wash and chop the onions. Rinse mint and cilantro greens under running water, shake off excess moisture and chop finely. Mix prepared herbs in a separate bowl, add chopped garlic, olive oil, salt and season with pepper.
Step 5
Serve, pre-cut the tortillas into triangular pieces, drizzle with pesto sauce and sprinkle with coarse salt.
