This delicate apricot pie will delight those who want to taste aromatic juicy fruit baked goods. Such a dessert that simply melts in your mouth will undoubtedly delight your home and guests. Apricots can be replaced with other fruits - nectarines, peaches, apples, plums. It should be noted that the fruit should not be overripe, so that they do not give a lot of juice.
It is necessary
- Dough:
- - 1 glass of flour
- - 1/4 teaspoon salt
- - 1/4 cup sugar
- - 100 grams of unsalted butter
- Filling:
- 3/4 cup unsalted pistachios (no husks)
- - 1 tablespoon flour
- - a few pinches of sea salt
- - 6 tablespoons of sugar
- - 5 tablespoons unsalted butter
- - 1 large egg
- - 1/4 teaspoon almond extract
- - 500 g apricots
Instructions
Step 1
First, prepare the pie dough. To do this, mix flour, salt and granulated sugar with a mixer.
Step 2
Then cut the butter into small pieces and then add to the mixer bowl. Stir again until the mixture forms lumps.
Step 3
Transfer the prepared dough to a 20 cm diameter baking dish covered with parchment paper. Cover the bottom and sides of the mold with the dough evenly. Bake in oven for 15 minutes, until pale golden brown. Then remove from oven and let cool completely.
Step 4
To prepare the filling, grind the pistachios into crumbs, add granulated sugar, flour and salt. Cut the butter into pieces and add to the mixture. All this should be whipped with a mixer. Then add the egg and stir again until smooth.
Step 5
Spread the resulting filling over the baked dough.
Step 6
Cut the apricots into small slices and place them on the filling as shown in the photo.
Step 7
Bake again in the oven for 60 minutes, or until the cake is golden brown and the toothpick comes out dry.

Then let cool completely and you can cut into squares.
