This strawberry pie is a delicious and aromatic pastry for tea. It contains rhubarb, which during heat treatment has a sweet-sour and juicy taste, it goes well with any other fruits or berries, including strawberries.

- Dough:
- - 300 g flour
- - 1 teaspoon of salt
- - 200 g cold butter
- - 1/2 cup iced water
- Filling:
- - 1 tablespoon flour
- - 2 tablespoons brown sugar
- - 1 bag of vanilla sugar
- - 1 tablespoon cornstarch
- - 700 g rhubarb and strawberries
- - 3 tablespoons of granulated sugar
- - 2-3 tablespoons of strawberry jam

- - 1 tablespoon milk
Instructions
Step 1
First, prepare the dough. To do this, combine flour and salt. Add cold butter, chopped into chunks and mix until crumbly. Then start adding water gradually and knead the dough. The dough should be smooth.
Step 2
If the dough is sticky, add a little flour. Shape it into a ball, wrap in plastic wrap and refrigerate for 1 hour.
Step 3
Now we are preparing the filling. To do this, cut the strawberries into quarters and cut the rhubarb into 1 cm pieces.
Step 4
Now combine the flour, cornstarch, granulated sugar and vanilla. Roll out the dough into a 45x40 cm rectangle. Place it on a baking sheet lined with parchment paper or oiled with vegetable oil.

Then add the rhubarb and strawberry filling. Sprinkle with 3 tablespoons of granulated sugar on top.
Step 6
Fold the edges of the dough as shown in the photo.
Step 7
Whisk eggs and milk. Spread the resulting mixture over the wrapped edges of the dough. Bake in oven at 200 C until the crust turns golden or brown.
Step 8
Remove the cake from the oven and let cool. Heat the strawberry jam slightly and apply to the fruit in the middle of the pie.
