Chill the dough products well beforehand. Sift the flour onto the table in a slide and make a depression in the center. Cut the butter into cubes and place in a depression, add salt, low-fat cottage cheese and knead the dough, kneading it thoroughly with your palms. Roll the finished dough into a ball so that the surface does not dry out, wrap it in cling film and refrigerate for two hours. If you are short on time, you can put the dough in the freezer for a short time.
Step 2
Wash the pink salmon fillets and blot with a napkin. Pour the lemon juice over the fish and sprinkle with ground allspice. Wash the leeks and separate them into separate sheets. Blanch them in a saucepan of boiling water for three minutes, then immediately rinse them with cold running water and let it drain. Spread the leek leaves slightly overlapped on a kitchen towel, blot with a napkin and let them dry. Put the fish on top, sprinkle with salt and wrap in onion leaves.
Step 3
Divide the chilled dough in two and roll out into rectangles about 20 x 40 cm on a lightly floured table. Cut each slice of dough in the shape of a fish. Place one "fish" from the dough on a baking sheet lined with baking paper. Place the pink salmon fillet wrapped in leeks on it. Brush the edges of the dough with egg white, put the second "fish" from the dough on top and press the edges well.

Use kitchen scissors or a knife to make small neat cuts on the dough, imitating fish scales. Shape the eyes and mouth from the scraps of dough, glue them with egg yolk. Mix the remaining yolk with a tablespoon of milk and brush the surface of the dough. Bake for about 40 minutes in the oven at 200 degrees. Pink salmon in dough is good both hot and cold. Sour cream with horseradish will be a great addition to such a dish.
