Step 1

Connoisseurs of Korean cuisine assure that neither carrots-cha, nor ve-cha are known to the original inhabitants of North and South Korea, and all this is the fantasies of Koreans who once moved to the USSR. But it doesn't matter anymore, because many vegetable dishes seasoned with pepper, vinegar and soy have fallen in love with the Russians and have acquired the status of Korean. Making a ve-cha salad in winter will be problematic, since the price of fresh vegetables at this time of the year increases significantly, and cooking requires 1–1, 5 kg of fresh cucumbers.

At first glance, it might seem that the amount of the main ingredient can be cut in half. But do not forget that 98% of a cucumber is water, and at least half of it will be removed during cooking. For Korean salad, the cucumbers are cut into thin half rings, lightly salted and left for half an hour just to release the juice. Then, the cucumber slices should be taken in handfuls and squeezed as hard as possible with both hands.

Having got rid of the lion's share of the water, the cucumbers will become soft like rags. Now you can add 2 teaspoons of vinegar essence to them. While the cucumbers are pickling, you need to cut any meat into small cubes. It is better to do the slicing while it is frozen. The meat is fried until cooked in hot vegetable oil, after which half rings of onions are added to it. Frying is done quickly, so it is not recommended to leave the meat and onions unattended.

Step 4

Now it's time to add hot spices to the cucumbers in the form of ground black and red pepper, crushed garlic. All this does not mix until hot frying is poured on top of them. A tablespoon of soy sauce, chopped bell pepper if desired, and now you can mix everything. Some people like this salad hot. You can really eat it right away, but it is not forbidden to hold it for 30 minutes so that the cucumbers are saturated with all the ingredients.

If there are a lot of cucumbers and they are from their own garden, then a substandard can be selected for a ve-cha salad: a distorted shape, overgrown. In this case, they need to be cleaned, large seeds removed, and the rest finely chopped. Thus, cucumbers will not only not disappear, but will also form the basis of a delicious spicy salad. For a salad of ve-cha, you can cut cucumbers into quarters or small cubes, but then you need younger fruits.
