Ratatouille is a simple dish but deliciously delicious. It is prepared from different vegetables, it turns out beautiful and bright. We will prepare ratatouille with original onion sauce and cheese topping.

It is necessary

  • For ratatouille:
  • - 400 g of tomatoes;
  • - 360 g each eggplant and bell pepper;
  • - 350 g zucchini.
  • For the sauce:
  • - 300 g of onions;
  • - 45 g tomato paste;
  • - 5 cloves of garlic;
  • - 8 tbsp. tablespoons of olive oil;
  • - 5 tbsp. tablespoons of lemon juice;
  • - 1 bunch of parsley;
  • - 2 teaspoons of dry thyme;
  • - 1 teaspoon of sugar;
  • - salt.
  • To fill:
  • - 100 g of Dutch cheese;
  • - 100 ml sour cream;
  • - 1 egg.

Instructions

Step 1

Peel the eggplants, cut into large pieces, sprinkle generously with salt on all sides, set aside for 15-20 minutes to let the juice flow. Rinse the eggplants from salt, dry with a paper towel. Dip fresh tomatoes in boiling water and peel. Cut the tomatoes and zucchini into larger pieces. Peel the bell pepper from seeds and white partitions, also cut coarsely.

Step 2

Prepare the sauce: mix tomato paste with sugar, dry thyme. Peel the onions, cut into cubes, chop the garlic through a garlic press, chop the parsley. Fry the onion in olive oil until transparent, add tomato paste, garlic, lemon juice, herbs. Season with salt to taste and stir.

Step 3

Mix the sauce with eggplant, zucchini and bell pepper, cover, simmer for 10 minutes, stirring several times during this time. Add tomatoes, stir, immediately remove from heat.

Step 4

Place the vegetables with the onion sauce in a baking dish. Prepare the filling: rub the cheese, beat the egg with sour cream, mix everything together. Spread the dressing evenly over the top of the vegetables.

Step 5

Cook the vegetable ratatouille in the oven at 200 degrees for 15 minutes. The cheese crust should turn golden during this time.

Decorate the finished baked ratatouille under a cheese crust with herbs, serve as a side dish or as an independent dish hot. Vegetables according to this recipe are always aromatic, juicy and soft.
