If you and your family love French cuisine, then be sure to make an onion soup. Only this is not an ordinary soup, but baked under an appetizing cheese crust, no one can resist such a first course!
It is necessary
- For six servings:
- - 1 kg of yellow onions;
- - 12 pieces of French baguette;
- - 2 cloves of garlic;
- - 2 cups grated Gruyere cheese;
- - 10 glasses of beef broth;
- - 0, 6 glasses of dry white wine;
- - 5 tbsp. tablespoons of butter;
- - 4 tbsp. tablespoons of olive oil;
- - 1, 25 teaspoons of wheat flour;
- - dried thyme, salt, sugar, black pepper.
Instructions
Step 1
Melt the butter in a large saucepan over moderate heat, add 2 tbsp. tablespoons of olive. Add onion, sugar, thyme, cut into half rings. Add salt and pepper to taste.
Step 2
Cook for 30 minutes, stirring occasionally. The onion should turn golden brown. After that add flour, mix.
Step 3
Add heat, pour in wine, beef broth. Bring to a boil, reduce heat, cover, cook for 30 minutes.
Step 4
Toast slices of bread on the grill or in a toaster until dry, rub with garlic, brush with olive oil. Fry the resulting croutons lightly again.
Step 5
Preheat the oven to 230 degrees, pour the soup into refractory portion molds, place two croutons on top, sprinkle with plenty of cheese. Bake for 15 minutes until golden brown. Serve immediately, do not wait for the onion soup baked under the cheese crust to cool down.
