Onion soup is considered a traditional French dish. It is made from onions and served with cheese and baguette.

Step 1
Peel the onions and cut them into half rings. To make the dish appetizing and aromatic, you need to fry the onion a little. To do this, place a lump of butter in a heavy-bottomed saucepan and melt it.
Step 2
Fry the onions over moderate heat, stirring constantly with a wooden spatula. Make sure it doesn't burn. Saute the onions until they are light golden and soft. It is for a ruddy shade that choose sweet varieties of onions. The roasting process will take about 20 minutes.

Add salt, pepper, add sugar to the onion and add flour. Cook for another 10 minutes. While the onion is cooking, cook the chicken or beef broth, strain.

Add hot broth (half of what you prepared) to a saucepan with sautéed onions, bring to a boil, cook over medium heat for at least 15 minutes. When the water evaporates a little, pour in the remaining broth and white wine for piquancy, cook for another 30-40 minutes.

The soup should be moderately thick. Pour it into bowls or ovenproof pots.
Cut the baguette, put in the soup, drowning them a little. It should get a little wet on both sides. You can take regular crackers. Sprinkle the soup generously with grated cheese on top. Serve the soup hot.
