  • - 25 g butter;
  • - 1 tbsp. a spoonful of olive oil;
  • - 1 teaspoon of sugar;
  • - salt and pepper.
  • To make croutons:
  • - 10 slices of French baguette;
  • - 2 cloves of garlic;
  • - 1 tbsp. a spoonful of mustard;
  • - 50 g of cheese.

Instructions

Step 1

Cut the onion into half rings. Pour olive oil into a saucepan with a thick bottom or into a frying pan and melt the butter. We spread the onion and simmer over the slowest heat for about 20 minutes under a closed lid.

Step 2

After simmering, open the lid and add sugar, salt and pepper. We close the lid and leave to simmer for another 30 minutes. The sugar will make the onions caramelized.

Step 3

Add the resulting onion mixture to the warm broth. Gradually add flour and mix thoroughly so that there are no lumps. Pour in white wine, brandy and salt to taste. And leave on low heat for another 30 minutes.

Step 4

In the oven, dry the sliced French baguette slices, rub them with garlic, grease with mustard and sprinkle with cheese.

Step 5

Pour the soup into refractory molds, put the croutons on top of the soup molds and send them to the oven. The soup should acquire a toasted cheese crust.
