No one doubts the need to eat fruits and vegetables because of their nutritional value. It is in vegetables that vitamins and carbohydrates so necessary for the body are contained. One of these vegetables is zucchini. There is a wide variety of dishes made from this vegetable, one of which deserves special attention.

- Onions - 2 pcs;
- Olive oil - 200 g;
- Parsley - 20 g;
- Garlic - 10 g;
- Bulgarian pepper - 100 g;
- Fresh tomato - 100 g;
- Carrots - 50 g;
- Vinegar - 3%;
- Ground salt and pepper to taste.
Instructions
Step 1
Peel the washed zucchini and cut into small rings. Place them in a preheated skillet with olive oil. Fry on both sides until golden brown. Then you need to put the cooked zucchini on a paper towel to remove excess oil.
Step 2
In the pan where the zucchini was prepared, you need to put the finely chopped onion and fry slightly. Then add finely chopped bell pepper, grated carrots, peeled tomatoes and seeds to the same place. Simmer all this over low heat for 15-20 minutes, stirring thoroughly. 5 minutes before cooking, add a tablespoon of vinegar, squeezed garlic, chopped parsley, salt and ground pepper. Cool when ready.
Step 3
Place the cooked tomato sauce in a container. Place the fried zucchini there. Mix everything and place in a blender. Grind until puree.
Step 4
Mashed potatoes are served both cold and warm, as a separate dish. Garnish with a mint leaf and a sprig of parsley before serving.
Step 5
It should be noted that zucchini puree is very useful for babies. In this case, it is prepared from boiled zucchini, usually cooked in a double boiler with the addition of potatoes and milk sauce. The specified mass is also ground in a blender.
