- 500 g fresh pumpkin;
- 3 carrots;
- 4 potatoes;
- 1 onion;
- 3 tbsp. tablespoons of olive oil;
- 1 glass of milk or cream;
- 2 cups meat or vegetable broth;
- red pepper to taste;
- curry powder to taste.

Step 1
For Pumpkin Ginger Soup, rinse, peel and chop the onion and garlic with a knife. Place them in a saucepan and fry in olive oil under a closed lid over low heat for 3-5 minutes until the onions soften. Wash, peel and cut the pumpkin into pieces. Place it in a saucepan and add water or pre-cooked chicken stock to it. Simmer until the pumpkin is cooked for about 15-20 minutes.
Step 2
Pepper, salt the soup and add ginger and turmeric to taste. Stir the dish thoroughly and drain off excess water. Wait for the cooked soup to cool, and strain it through a sieve or chop with a blender until puree. Serve the ginger pumpkin soup with cream and garnish with parsley.

If you want to try the pumpkin curry puree soup, then cut the peeled potatoes and carrots into large cubes with a knife. Wash, peel and finely chop the onion. Take a deep frying pan or stewpan, heat the olive oil in it, put the onion there and simmer it for 5 minutes until soft. Add broth or vegetable stock, bring to a boil and add potatoes and carrots. Season the soup to taste. Wash, peel and cut the pumpkin into large cubes and add them to the vegetables after 5 minutes from boiling. Simmer the soup for about 10 minutes more.
Step 4
Turn off heat and let cool. Then use a blender to puree it. If there is no blender, then you can rub the soup through a sieve. Pour cream or milk into it and boil again, stirring occasionally.
