It is necessary

  • 600 g of pumpkin (the weight is indicated for the peeled vegetable, without peel and seeds);
  • 2 red onions;
  • 1 head of garlic (vary the amount to your taste);
  • 1 large carrot;
  • 600 ml of tomatoes in their own juice;
  • 3 tbsp. l. vegetable oil (ideally olive oil);
  • 2 tbsp. l. soy sauce;
  • 1 tsp curry;
  • Salt optional;
  • Broth (vegetable, meat, it is allowed to cook in water);
  • Pumpkin seeds.

Instructions

Step 1

We begin to prepare pumpkin puree soup. First, take a baking dish. Put in it the peeled pumpkin, cut into large pieces.

Step 2

Peel the onion, cut it into 4 pieces, and place on top of the pumpkin. Do similar manipulations with carrots.

Step 3

Divide the head of garlic into cloves without peeling, put in a baking dish.

Step 4

Sprinkle the prepared vegetables with soy sauce and vegetable oil. Send the baking dish to the oven preheated to 200 ° C. The cooking time of vegetables is 30-40 minutes (do not forget to stir them a couple of times), you need to bake until soft.

When the vegetables are cooked, transfer them to a deep saucepan, carefully remove the husks from the garlic. Add tomatoes in your own juice, salt, curry to the products. Add broth or water to the pumpkin soup, if needed. It is important that the liquid completely covers the vegetables.

Put the saucepan with the ingredients on gas, boil the contents, then reduce the heat to low and simmer the future pumpkin puree soup for 10 minutes.
