Viburnum jam (classic recipe)

This recipe is one of the easiest and requires little effort. For the classic recipe for viburnum jam, we need the following ingredients:

  • red viburnum berries - 1 kg;
  • granulated sugar - 850 g;
  • water - 200 ml.

It is better to use fresh berries for jam. Before preparing the delicacy, the viburnum berries are cleaned of leaves and twigs, washed under cold running water and dried.

It is better to cook the jam in an enamel bowl to avoid burning. The berries are placed in a container and poured in 200 ml of water, put on low heat. After the water boils and the berry releases juice, the fire is turned off.

Simultaneously with boiling the berries, you can prepare sugar syrup. For this, granulated sugar is mixed with water and cooked over low heat until completely dissolved. After the syrup has begun to boil, berries are transferred into it along with the resulting juice and continue to cook for half an hour. After the specified time, the jam is allowed to rest and cool (5 hours). Then the jam is boiled again, while removing the froths. As soon as the jam begins to thicken, the fire is turned off.

The resulting mass is laid out in jars (previously sterilized) and covered with lids.

Viburnum jam with vanilla and lemon

This recipe is not as common as the classic one, however, lovers of viburnum will appreciate it. To make such a jam, you need the following ingredients:

  • red viburnum berries (fresh) - 1 kg;
  • granulated sugar - 1.5 kg;
  • 2 glasses of water;
  • vanilla (on the tip of a knife);
  • lemon - 1 piece.

The berries are pre-sorted, cleaned and washed under running water. Kalina is treated with saline at the rate of 20 grams of salt per 1 liter of water. In this composition, the viburnum is kept for 5 minutes. This trick will help get rid of the bitter taste of the berry.

Sugar syrup is brewed in the same way as in the classic recipe. As soon as the mixture begins to boil, berries are placed in it and continue to cook over low heat. After half an hour, the jam is turned off and rest is given for 7 hours.

During this time, a lemon is prepared. The peel of the fruit is rubbed on a fine grater, the juice is squeezed out. The resulting gruel is transferred to a saucepan with viburnum and boiled for 5 minutes. A few minutes before the jam is ready, add vanillin to it and mix thoroughly. The mixture is laid out in jars and covered with lids.

To prepare viburnum jam according to this recipe, you need the following ingredients:

  • sweet apples - 3.5 kg;
  • red viburnum berries - 1.5 kg;
  • granulated sugar - 3.5 kg;
  • water - 350 ml.

As in the previous recipes, it is necessary to rinse and peel the viburnum berries. Dry berries are ground to a state of porridge.

Apples are washed, peeled and pitted. After that, they are finely chopped and placed in an enamel bowl. Pour 100 ml of water and add 1 kg of granulated sugar. Boil the mixture until it thickens.

Add a mixture of viburnum and the remaining water to the applesauce. Cook the jam for 30 minutes, then turn it off. The finished delicacy is laid out in jars and sealed with tin lids.

Viburnum jam with rowan fruits

The recipe for viburnum with mountain ash cannot be called ordinary. Few culinary experts know about it and rarely cook. However, this does not deprive the guelder-rose jam with rowan of useful properties, which are almost doubled due to the addition of rowan.

To make the jam, you need the following ingredients:

  • viburnum berries - 1.5 kg;
  • rowan berries - 1.5 kg;
  • granulated sugar - 2.5 kg;
  • water - 250 ml.

As always, jam making starts with processing the berries. Kalina and mountain ash are thoroughly cleaned of leaves and stalks, washed in cold water and dried on a waffle towel.

Dried berries are placed in an enamel container and covered with sugar. The resulting mixture is thoroughly mixed. Boil the mixture for 6-8 minutes until the first juice appears, cool. Leave the berries for several hours. repeat the procedure 3 times. During the last cooking, a thick consistency is achieved. Transferred to sterile jars and roll up.
