In the summer and fall, it is especially important to prepare for the coming winter. And the easiest way to do this is to saturate the body with vitamins and minerals. Eggplant is one of those vegetables that are rich in nutrients, including vegetable protein and carbohydrates. There are a lot of eggplant dishes, and one of them is eggplant caviar.
It is necessary
- - Eggplant - 2 kg;
- - Onions - 0.5 kg;
- - Carrots - 0.5 kg;
- - Tomatoes - 1 kg;
- - Bulgarian pepper - 0.5 kg;
- - Garlic - 1/4 head;
- - Vegetable oil;
- - Salt.
- - Cauldron or deep thick-walled pan.
Instructions
Step 1
Peel onions, carrots and garlic. Rinse all vegetables under running water.
Step 2
Chop the eggplants, bell peppers, onions and tomatoes into equal sized cubes. Cut the carrots and garlic into half rings.
Step 3
Heat a cauldron, pour in vegetable oil. Lay the onions and sauté until golden brown. To make the caviar tasty, it is important to follow the sequence.
Step 4
Add carrots to onions and fry for about 5-7 minutes.
Step 5
Put the tomatoes, mix well. As soon as the tomatoes start juicing, add the garlic and simmer the vegetables in a cauldron for another 5 minutes, stirring occasionally.
Step 6
Add eggplant and bell pepper, and salt to taste, mix thoroughly.
Step 7
Cover the cauldron with a lid and reduce the temperature. Simmer the eggplant caviar for 20-30 minutes until the eggplant is tender.
