These seafood salads may well replace the traditional New Year's Olivier. Be sure to give them a try, as it is quite possible that they will become specialties in your family!
New Year's salad "Princess"
The unusual design of the salad and its unique taste will surely please your guests. To prepare this dish, you will need the following products:
- 1 can of canned salmon;
- 1 small onion;
- 200 g of hard cheese;
- 6 eggs;
- 1 unsweetened apple;
- 1 tsp lemon juice;
- 0, 5 cans of canned corn;
- mayonnaise;
- pepper and salt to taste.
To decorate the salad:
- 200-300 g of slightly salted salmon fillet;
- 2 boiled quail eggs (optional);
- 1 tablespoon red caviar;
- 4 tablespoons soft cream cheese;
- 1 tbsp red caviar;
- fresh herbs.
Preparation
Drain the excess oil from the canned salmon jar, remove any large bones, and then mash the fish with a fork. Peel the onion and chop finely.
Boil chicken eggs, cool them and divide them into yolks and whites. Chop the yolks with a knife, and grate the whites and set aside.
Drain the canned corn juice. Grate the cheese on a coarse grater. Wash the apple, peel and seed. It is better to grate the apple in the process of laying out the layers so that it does not darken. Take a large flat dish and lay out the salad in the following sequence:
- salmon;
- onion;
- yolks and mayonnaise;
- grated apple sprinkled with lemon juice;
- grated cheese and mayonnaise;
- corn.
The finishing touch will be to cover the salad with grated proteins and decorate with strips of salmon, caviar and cream cheese.
"New Year's Pleasure" salad
You will need:·
- 150 g of mushrooms (you can use oyster mushrooms or champignons;
- 150 g of a mixture "sea cocktail";
- 300 g of mayonnaise;
- 2 medium potatoes;
- 4 eggs;
- 130 g of hard cheese;
- 2 pcs. medium-sized carrots;
- shrimp for decoration;
- 2 fresh cucumbers;
- caviar black or red for decoration (you can use protein caviar);
- salt (to taste).
Preparation
Boil the eggs, peel them and chop them. Grate cheese and fresh cucumbers on a coarse grater.
Finely chop fresh oyster mushrooms or champignons, rinse thoroughly and fry them in sunflower oil, then lightly salt them.
Boil the potatoes and carrots, peel and cut into small cubes. Fry the seafood cocktail in butter for 7-10 minutes.
Lay the salad in layers on a flat dish, in the middle of which place a glass. As a result, you will get a beautiful salad wreath. You need to lay the layers in the following sequence, not forgetting to grease each layer with mayonnaise: fried mushrooms, potatoes, seafood cocktail, carrots, chopped chicken eggs, grated fresh cucumbers and the last layer is to put hard cheese.
Garnish the salad with caviar and top with the peeled shrimp. Add fresh herbs if desired.
