Any chicken broth is a lighter version of chicken soup and is usually prepared with just a few ingredients. If you cook chicken broth and add semolina dumplings to it, you get a fairly common Ukrainian dish.
It is necessary
- For four servings:
- - 500 g of chicken;
- - 100 g semolina;
- - 2 eggs;
- - 2 carrots;
- - 1 onion;
- - 2 parsley roots;
- - 1 celery;
- - 50 g of greens;
- - 30 g butter;
- - salt.
Instructions
Step 1
Pour cold water over the chicken, bring to a boil. Remove the foam, add onions, carrots, parsley, celery (chop all these components coarsely).
Step 2
Salt the broth to taste, cook until tender. You should get a golden rich broth.
Step 3
Remove the chicken from the pan, separate the meat from the bones, cut into small pieces.
Step 4
Strain the broth to make it even lighter, put it back on the stove, add chicken meat.
Step 5
Knead the dough from semolina by adding salt, eggs, butter. Divide the dough into dumplings, dip them in the broth. Cook together for 5 minutes.
Step 6
Pour ready-made chicken broth with dumplings into soup bowls, sprinkle with chopped fresh herbs on top. Serve hot.
