New Year's days fall on Christmas fast, and those who adhere to Orthodox canons exclude meat products, milk, eggs from their diet and replace them with vegetables, cereals, and mushrooms. But this does not mean at all that the New Year's table will be meager. Lenten meals can be delicious, varied, and quite festive.
Lenten seafood dishes
On the festive days of fasting there are indulgences - it is allowed to eat fish and seafood. From them you can add exquisite, delicious masterpieces. A small selection of lean seafood dishes for the New Year:
Stuffed squid. For 5 squids, you need 2-3 small onions, 2-3 medium carrots, 8-12 pcs. prunes, 1 sour apple, 2 tomatoes, 1 liter. table flour, 1 l. tea tomato, 1 l. tablespoonful of soy sauce instead of salt.
Put frozen carcasses in a saucepan with water, bring to a boil. Then take them out, clean and cut off the heads. Chop the onion, grate the carrots and fry the vegetables in a skillet in sunflower oil until almost cooked. Add steamed and finely chopped prunes, peeled grated apple and sliced tomatoes to the skillet. Before that, remove the skin from them. Bring the vegetables until the carrots are cooked.
Fill the squid carcasses with minced meat. Prepare the sauce: fry the flour, add the remaining vegetables, cut into pieces of squid head, tomato, soy sauce, a little water to it. The sauce should be medium thick. After the mixture boils, simmer for 5-7 minutes. Pour the sauce over the squid.
Squid in batter. Take 5 pieces of squid, flour (1 tbsp.), Cold water (1 tbsp.), Sunflower oil (0, 6 tbsp.), Baking soda (1 liter. Tea), starch (1 liter. Tablespoon), salt. Boil peeled squid carcasses in boiling water for just a few minutes, cool, cut into rings. Prepare the batter: dilute the flour with water, add oil, add starch, salt and stir. Dip the squid rings in batter and fry in hot oil.
Shrimp salad. Take 500 g of boiled peeled shrimp, mix with 1 can of corn. Season with 4-5 tablespoons of mustard sauce and sprinkle with chopped herbs.
Lenten mushroom dishes
Mushrooms are a great alternative to meat, they can be used to prepare delicious lean dishes that guests will surely like:
Cabbage roll with mushrooms. Take forks of white cabbage, 2 l. table sunflower oil, 500-600 g frozen or 60-80 g dried mushrooms, 1 tbsp. buckwheat, 2 pcs. onions, turnips, salt, pepper, herbs. Prepare the filling: combine boiled and fried mushrooms with onions with viscous buckwheat porridge plus spices.
Scald the head of cabbage with boiling water, stand for 5 minutes and disassemble into leaves. Cut or beat off thick veins and place on a cloth so that the next sheet overlaps part of the previous one. Spread the filling on the leaves, use a napkin to roll it into a roll, place it on a greased baking sheet and in the oven for 30 minutes.
Potatoes stuffed with mushrooms. You will need potatoes, preferably round, 10 pcs., Mushrooms 500 g, onions 2-3 pcs., Vegetable oil, dill, salt, pepper. Boil unpeeled potatoes, chop the mushrooms and scald with hot water. Squeeze them out of the water and sauté in butter along with chopped onions. Peel the potatoes, cut into halves, take out some of the pulp and mix with the fried mushrooms. Fill the potato halves with minced meat, garnish with dill on top.
Lean salad recipes
From vegetables, nuts, fruits, you can create festive lean dishes, salads, various snacks, snacks that surpass meat dishes in taste.
Pumpkin salad. The ingredients are the simplest: 70 g of shelled walnuts, 400 g of pumpkin, 1 liter. table vegetable oil, 1-2 cloves of garlic, 2 liters. table wine vinegar, dill, mint. Lightly fry the pumpkin, peeled and cut into small pieces, then simmer over low heat until soft. Cool it down. Prepare the peanut sauce: grind the nuts with salt, garlic and herbs and dilute the mixture with wine vinegar or the juice of one lemon. Season the pumpkin with the sauce and sprinkle with herbs.
Pineapple puff salad. First layer: finely chopped crab sticks (200 g) or squid meat; second layer: onions, chopped in half rings and pre-pickled; third layer: finely chopped canned pineapples (400 g); fourth layer: sweet corn (1 can). Coat all layers with lean mayonnaise.
And, of course, fruits on the Lenten New Year's table can be abundant.
