Do you like stuffed pancakes, but do not want to spend a lot of time and energy on their preparation? Then this recipe will definitely come in handy for you. You can make a variety of fillings, but the proposed option in this recipe is one of the best.

- • ½ liter of kefir;
- • 1 pack of cottage cheese;
- • 1 tablespoon of sugar;
- • 150 g of fresh champignons;
- • 2 tablespoons of sour cream;
- • 320 g of wheat flour;
- • 2 chicken eggs;
- • ½ teaspoon of salt (and filling to taste);
- • 1 teaspoon of baking soda;
- • 300 g of chicken meat (fillet);
- • 2 medium sized onions;
- • some chopped parsley;
- • ground black pepper.
Instructions
Step 1
First you need to make a pancake dough. This requires a deep cup. Pour into it pre-broken eggs, half of the kefir, and also add granulated sugar, salt and half of the pre-sifted wheat flour. Also, do not forget to put cottage cheese, rubbed through a sieve. All these ingredients are very thoroughly mixed together.
Step 2
In another cup, you will need to mix the second part of kefir, as well as soda. Beat everything thoroughly with a whisk until a persistent foam forms. The resulting mass should be poured into a cup with dough and the remaining flour should be added there. Then you will need to knead the dough so that there are no lumps in it.
Step 3
Prepare the filling. To do this, you need to rinse the chicken fillet thoroughly and dry it with a paper towel. Then the meat should be cut into medium-sized cubes. The champignons also need to be washed and chopped into small pieces.
Step 4
Remove the husk from the onion, rinse it in cold water and cut into very small cubes.
Step 5
Place the frying pan on a hot stove and pour a little oil into it. After it gets hot, add the prepared meat, mushrooms and onions to it. Fry with regular stirring over medium heat.
Step 6
When there is practically no liquid left in the pan, add sour cream, chopped herbs to it, pepper and salt. Mix everything and remove the pan from the stove.
Step 7
Pour the dough for one pancake into a frying pan preheated with oil. When it is well done on one side, turn it over and put some of the filling on top, but so that it does not hit the edges. Then fold the pancake in half and fry for another minute, and then the same amount on the other side. Do the same with the rest of the pancakes.
