Eggplant rolls are a great snack on a festive table. Juicy baked eggplant, aromatic fish filling and cheese melting on the tongue are a combination that will plunge everyone into a real culinary ecstasy.
It is necessary
- For rolls:
- • 5 eggplants;
- • fish fillets (salmon, pink salmon, trout);
- • 3 onions;
- • 2 carrots;
- • 2 bell peppers;
- • 100 g of hard cheese;
- • salt.
- For the sauce:
- • 3 large tomatoes;
- • 2 onions;
- • suneli hops;
- • salt, ground pepper;
- • 1 egg;
- • half a glass of low-fat sour cream;
- • sunflower oil;
- • sugar (to taste).
Instructions
Step 1
Eggplants must be thoroughly washed, removed from the tails, cut the vegetable lengthwise into thin long slices and salt.
Step 2
Grind the prepared fish fillets in a meat grinder or blender.
Step 3
It is necessary to prepare the filling from the fish. For this, the onion and pepper are finely chopped, and the carrots are grated. All ingredients are fried in vegetable oil in a frying pan until the onion acquires a golden hue. It is important to let the roast cool down. Later, add grated cheese to it, add a pinch of salt and pepper, add an egg and minced fish, and then mix everything thoroughly.
Step 4
Cooking the sauce acts as the next step. Finely chop the onion and fry in sunflower oil. The peel is removed from the tomato and they are ground in a blender, then added to the onion in a skillet and stewed for about 7 minutes. A mixture of hops-suneli will serve as a seasoning, you can throw in a pinch of salt and pepper. Sour cream, herbs and sugar are added to the sauce, everything is stirred, covered with a lid, after which the contents of the pan are stewed for another 5 minutes.
Step 5
Then the minced meat is carefully laid out on the sliced strips of eggplant and the plates are twisted into rolls, which are transferred to a baking dish. Pour the sauce on top and spread it evenly.
Step 6
The form is hidden in the oven at 180 degrees for 30 minutes. It tastes better when warm.
