Eggplant dishes are prepared quickly, they turn out delicious, and the number of recipes for which you need eggplant is simply not counted. Dishes are prepared both for a festive table and for an everyday one. You can even cook first courses with them.

It is necessary

  • - large eggplant;
  • - 2 medium onions;
  • - 4 cloves of garlic;
  • - 2 medium tomatoes;
  • - 2 carrots;
  • - salt, pepper, soy sauce, spices - to taste;
  • - 2-3 tbsp. tablespoons of sunflower oil.

Instructions

Step 1

Peel well-washed vegetables. Cut the eggplant lengthwise so that you get thin slices (5-7 mm). Season with salt and leave for 5-7 minutes to release excess liquid and bitterness. Dice the onion and heat the grill pan.

Step 2

Lightly wipe the pan with vegetable oil and fry the eggplant on both sides. After frying, leave the eggplant strips in a warm skillet.

Step 3

Fry the onions in vegetable oil until golden brown. Grate the carrots and tomatoes on a coarse grater. Add carrots to the fried onions, salt and mix gently. Leave to simmer in the pan for a few minutes.

Step 4

Pour the grated tomatoes into the fried vegetables, mix everything again, let the liquid evaporate a little over low heat. Add soy sauce, crushed spices, and finely chopped garlic to the vegetables. Stir, remove from heat and cool.

Step 5

Spread the eggplant plates on a clean surface and wrap the finished filling in them.
