An uncomplicated but original recipe for an African-style chicken dish. Pieces of tender chicken fillet should be stewed in a very aromatic sauce; it is better to serve the finished dish with boiled rice.
It is necessary
- For six servings:
- - 6 chicken breast fillets;
- - 500 ml of Passat tomato sauce or simply mashed tomatoes;
- - 400 g of canned chickpeas;
- - 50 g of cilantro;
- - 5 cloves of garlic;
- - 4 tbsp. spoons of peanut butter;
- - 2 tbsp. spoons of curry, olive oil;
- - pepper, salt.
Instructions
Step 1
Heat the olive oil in a skillet, put the peeled and chopped garlic there, fry it a little. Add chopped chicken fillet and cook over medium heat for 5 minutes. After that, send the curry seasoning, salt, pepper, grated tomatoes, peanut butter and canned chickpeas to the pan (you must first drain all the liquid from it), simmer for 25 minutes over low heat.
Step 2
If you couldn't get ready-made peanut butter, you can make one yourself. To do this, grind 200 g of peanuts in a blender until you get a pasty mixture.
Step 3
Rinse and cut the cilantro, leave a couple of twigs to decorate the finished dish. Add the cilantro to the skillet and cook for another 5 minutes. If the sauce is too thick, pour a few tablespoons of plain water into the pan.
Step 4
Taste the sauce, add salt and pepper if required. Place hot chicken breasts and sauce on plates, garnish with cilantro sprigs. Serve immediately, African-style chicken breasts are especially delicious when hot. This chicken is best combined with rice, but you can also serve it with boiled pasta.
