- Eggplant - 2.5 kg
- Sweet pepper - 500 g
- Bitter pepper - 3 pieces
- Sugar - ½ tablespoon
- Vegetable oil - 1/2 cup
- 9% vinegar - 1 tablespoon
- Salt to taste

Step 1
The eggplants should be cut lengthwise so that strips are about 4-5 mm thick, then sprinkle with salt and leave for about two hours. Over time, you should clean the eggplants from excess salt, squeeze lightly and then fry in vegetable oil.
Step 2
Pass the garlic, hot and sweet peppers through a meat grinder. Add vinegar, sugar to the mixture of peppers and garlic, then mix everything thoroughly.
Step 3
Place a strip of eggplant on a cutting board, brush with a mixture of peppers and garlic and gently roll into a roll. Place the finished rolls in half-liter jars and sterilize for 7-10 minutes. Roll up the jars, turn upside down, wrap them in a thick cloth and leave to cool completely.
