Broccoli is the progenitor of all types of cabbage, it is famous for its beneficial properties and low calorie content. This vegetable contains vitamins of group B, as well as vitamins A, E, C, K, in addition, it is rich in minerals and fiber. This vegetable can be used to make a delicious meal for lunch or dinner, such as a puree soup.
Food preparation
In order to make broccoli puree soup, you will need: 600 g broccoli, 1 head of onion, 2-3 cloves of garlic, 4 cups vegetable broth, ½ cup raw cashews, 1 boiled potatoes, salt, black pepper, white bread for croutons.
Cooking broccoli puree soup
To make broccoli puree soup, rinse all vegetables first. Peel the onion and garlic, chop, then put them in a saucepan, send the broccoli there and fill the ingredients with vegetable broth. Bring the contents of the saucepan to a boil, then reduce the heat and simmer, covered for about 8 minutes, during which time the broccoli should soften.
In a blender, combine half the broth and broccoli, half the potato tuber and half the cashews. Chop and beat the ingredients until smooth, then transfer to another saucepan. Repeat the same procedure with the remaining ingredients.
Cover the pot of broccoli puree soup with a lid and simmer for 10 minutes. Season the soup with salt and black pepper to taste.
Cut the white bread into cubes, cutting off the crusts, then toast it in a hot skillet or dry it in the oven.
Divide broccoli puree soup onto portioned bowls and serve with croutons.
