To prepare 6 servings, you will need:

  • 1 can of tuna (200 g);
  • 1 cup rice
  • 3 boiled eggs;
  • 1 large yellow or green bell pepper (both are possible);
  • 500 g cherry tomatoes;
  • a few lettuce leaves;
  • 4 green onion feathers;
  • one glass of chicken broth and water;
  • 1/4 cup chopped fresh dill
  • 1/3 cup lemon juice
  • 1/4 cup vegetable oil
  • 1 tbsp. a spoonful of Dijon mustard;
  • salt;
  • ground black pepper.

How to make canned tuna and rice salad

Boil the broth and water in a saucepan. Cook rice in them until tender. Let it cool down. Stir the rice to avoid sticking.

Cut the bell peppers and eggs into small cubes, and cut the cherry tomatoes in half. Chop green onions coarsely.

Dressing: In a small bowl, stir together the lemon juice, mustard, black pepper, salt and vegetable oil.

Add tuna, bell peppers, eggs, tomatoes, onions, dill to a bowl of chilled rice. Top with lemon pepper dressing. Mix everything.

Spread lettuce leaves on a serving platter, put lettuce on top of them.

This dish takes 10 minutes to prepare and 30 minutes to cook. To save time, you can prepare the dressing and boil the rice in advance.
