Delicious, aromatic and satisfying first course with egg noodles. Any mushrooms are suitable for soup: frozen, fresh, dried. Hot mushroom soup with homemade noodles will be a wonderful lunch for all family members.
Ingredients for the dough:
- 200 g wheat flour;
- ½ tsp salt;
- 2 tbsp water (warm).
- 2 chicken eggs;
Soup Ingredients:
- 300 g of mushrooms;
- ground black pepper;
- 80 g onions;
- 150 g carrots;
- salt.
Preparation:
- Before boiling the soup, knead the noodle dough. Break two eggs into a bowl, add salt and pour two tablespoons of heated water. Mix until smooth.
- Sift the wheat flour into a separate deep bowl, make a small hole in the middle, pour the egg mixture into it. Knead the tough dough thoroughly. Then cover it with a kitchen towel, leave in a warm place for half an hour.
- Over time, roll out the dough with a rolling pin into a thin sheet, sprinkle with flour and gently roll into a tube. Sprinkle with flour so that during cutting it does not stick together. Cut the dough tube into thin rings. Raw noodles are ready. If you have a special machine for rolling and cutting the dough, then the cooking process will be much easier and take less time.
- Pour water into a saucepan and bring to a boil, add raw noodles and cook in boiling water for 5-7 minutes. Homemade noodles cook very quickly. Then pour out the water and leave the noodles in a saucepan.
- Cut the mushrooms into arbitrary small pieces, carrots into strips, onions into small cubes.
- In a separate saucepan, where the main ingredients will be cooked, pour one and a half liters of clean water, bring to a boil and add the chopped mushrooms. Boil them for 10-15 minutes, and then add the rest of the vegetables here: carrots and onions. Salt and pepper, cook until the products are completely softened.
- Pour the soup into bowls and add the noodles. If desired, you can decorate with chopped herbs and add a spoonful of sour cream or mayonnaise to taste.
