Straciatella is an Italian soup made from semolina, eggs, grated parmesan and parsley. The dish is usually prepared in chicken or beef broth. But in this recipe, the soup is presented in vegetable broth, which does not make it less tasty.
It is necessary
- - 1 liter of water;
- - carrot;
- - 3 eggs;
- - bulbs;
- - 3 tbsp. decoys;
- - a few sprigs of parsley;
- - 2 slices of white bread;
- - a piece of cheese;
- - salt and pepper.
Instructions
Step 1
Pour 1 liter of water into a saucepan, add the peeled onion and whole carrots.

Bring to a boil and simmer for about 5-10 minutes.

Prepare the ingredients at this time. Shake the eggs with a fork, separate the parsley from the stems and chop very finely.

Grate cheese on a fine grater, dry white bread in a toaster, sprinkle with cheese.

In the original recipe for the "Straciatella" soup, cheese is put directly into a saucepan, but there it is practically not felt; it is better to serve it separately on toast.

Remove the vegetables from the broth; they will no longer be needed.
Step 7
While stirring the broth, add semolina to it, add pepper and salt. Cook for 3 minutes.
Step 8
Stir vigorously and slowly pour in the eggs. Cook for about 3 more minutes.
Step 9
Add greens, turn off heat.
Step 10
Pour the prepared soup into bowls.
