With the onset of hot summer days, the body requires chilled food, not to mention its needs for ice cream. A home-made delicacy is not inferior to store-bought delicacy in taste, and if you read its composition on the label, then the choice will clearly not be in favor of ice cream from a stall.
It is necessary
- - milk, fat content not less than 3.5%
- - cream, fat content 20%
- - 4 egg yolks
- - 160 ml granulated sugar
- - 25 g chocolate chips
Instructions
Step 1
Pour milk and cream into a saucepan, mix. Put on the stove over medium heat until the milk mixture boils.
Step 2
The yolks are whipped in a large bowl, sugar is gradually introduced into them. Beat until the egg mass acquires a pale yellow color and soft texture.
Step 3
The boiled milk mixture must be removed from the heat. Uncooled milk mixture, stirring constantly, gradually pour into the egg mass. It is important to keep the whisk upright while stirring to avoid the formation of bubbles on the surface of the ice cream.
Step 4
Pour the resulting mixture back into the saucepan and set to medium heat. Stir constantly with a wooden spatula until the mass thickens. To prevent the mixture from burning, grasp the middle of the bottom and edges of the pan while stirring. It must not be allowed to boil. When the consistency of liquid sour cream is reached, the cream can be considered ready, it must be removed from the heat.
Step 5
The cream is placed in a cold water bath. To do this, fill a very large bowl with very cold water halfway, throw ice cubes into it. A pot of cream is placed on top of the pot. Stir the cream for about half an hour or 40 minutes until it cools completely. Stirring will prevent the ice cream from crystallizing.
Step 6
The pan with ice cream is removed from the water bath, tightly closed with a lid and sent to the refrigerator for 4 - 5 hours for even greater cooling.
Step 7
After five hours, the ice cream is removed from the refrigerator and poured into the ice cream freezer, where it scrolls for half an hour. Add the chocolate chips at the last moment of scrolling. The mass at the end of the roll will look like melted ice cream. The container is filled with the resulting mass and sent to the freezer for 3 - 4 hours to cool completely.
Step 8
In the absence of an ice cream maker, ice cream is poured directly into a container, chocolate chips are added to it, mixed and sent to the freezer. Before solidification, the container is removed and the contents are mixed every 30 minutes.
