Italian pasta is becoming more and more popular in Russia, and today housewives strive to cook it in their kitchen. And if pasta with liquid tomato sauce is not quite familiar to Russians, then with meat sauce it seems quite attractive. The classic Bolognese sauce is ideal for a festive or casual dinner.

It is necessary

    • Ground beef 700 g
    • canned tomatoes in their own juice 800 g
    • onion 1 pc
    • carrots 1 pc
    • 100 ml dry red wine
    • fresh basil
    • olive oil
    • salt
    • pepper
    • nutmeg
    • Parmesan cheese
    • spaghetti or fettuccini pasta 500 g

Instructions

Step 1

Prepare food. Peel and finely chop the onion, remove the tomatoes from the jar, remove the peel and puree in a blender with the juice, peel and grate the carrots. Separate the basil leaves from the stems, rinse well in cold water, dry. Then chop them finely.

Step 2

Heat a deep skillet (sauté pan) with olive oil. Saute the onions and carrots over medium heat until soft (about 4-5 minutes with constant stirring).

Step 3

Add minced meat to the saucepan. Use a spatula to break up large lumps while stirring. Fry the minced meat over medium heat for 10-15 minutes, stirring occasionally. If you want a thick sauce without large lumps, use a fork. Knead the minced meat lumps while frying, and you will end up with a homogeneous tomato-meat mass.

Step 4

Pour wine into the pan, turn on the maximum heat and evaporate the alcohol for a few minutes.

Step 5

Pour the tomato paste to the resulting sauce, add basil, salt, black pepper and nutmeg on the tip of a knife. Stir the sauce thoroughly, let it boil. Then reduce heat to low, cover the saucepan and simmer for at least an hour. Minced meat will be ready in 20 minutes, but it is important to simmer the sauce over low heat to get a real Italian bright taste.

Step 6

Put the water in a saucepan on a fire, let it boil. While the sauce is stewing, boil the pasta in salted water. The cooking time depends on the type of pasta, usually it is indicated on the package and does not exceed ten minutes.

Step 7

Grate the Parmesan. It is advisable to use the Parmegiano Rigiano variety.

Step 8

Throw the prepared pasta in a colander, sprinkle with olive oil and stir. Next, you have two options. You can place the pasta on bowls and top it with the sauce. Alternatively, stir the pasta and sauce in a saucepan and then place on plates.

Step 9

Sprinkle Parmesan cheese over each serving.
